This was one of the first dishes I cooked for Kayla and it was an instant hit:
Ingredients
- 1lb butternut squash, cut into 1" cubes
- fresh parsley, chopped
- 2 cloves garlic, minced
- 1cup olive oil
- 1/4 tsp salt & pepper
- 1/2 cup freshly grated parmesan cheese
Instructions:
- heat oven to 400F
- using a large bowl, mix olive oil, salt, pepper, parsley, garlic. Add cubed butternut squash and coat thoroughly
- sprinkle parmesan cheese onto butternut squash and mix thoroughly
- transfer to an ungreased shallow baking dish (about 2qt) and bake uncovered for 50mins or until desired tenderness
- when desired tenderness reached, remove from oven, sprinkle with more parmesan cheese (I like mine really cheese) and bake for an additional 2mins
